Easy Romantic Chicken Cacciatore
What to get:
1 or two jars of spaghetti sauce (try "Classico Traditional Favorites").
2 to 4 boneless chicken breasts (frozen or not, it does not matter)
4 cups of steamed rice
A bag-o-salad (pick something with dressing and everything – something she likes)
If you cannot make rice without burning it, then get some steamed rice at the local Chinese restaurant. Otherwise cook the rice.
In a large deep pan, place the boneless chicken breasts in with a jar or two of spaghetti sauce (I think Classico is the best). Put the burner on medium low. Let 'er drift for about 30 minutes (it should be simmering, but not boiling). Just set the timer for 30 minutes so you don't forget about it. Check to be sure the chicken is cooked through (heat to 160 degrees internally – or cut it open to make sure there's no gooey/clear looking meat).
Mix up the salad in a large bowl.
Serve the chicken and sauce over the rice and the salad on the side.
And, as always, include candles or dimmed light and some nice calm background music. So: what's romantic about this recipe? It's not the candles and it's not the food itself – it's the fact that you were thoughtful, planned ahead and made a nice dinner for your wife.
That's it! You just made a "gourmet" meal in 30 minutes without much work. But the payoff is that your wife will love the fact you made dinner for her.
